Ph.D., Professor and Department Head of Food Science and Nutrition at the University of Minnesota

 
  • Research focuses on problem solving for the food and flavor industries
  • Resident and outreach teaching of six University courses around food processing, technology, chemistry and analysis
  • Has published over 230 research articles
  • Serves on Editorial Board of Journal of Food Analysis, US Assoc. Editor of Flavor and Fragrance Journal, Editorial Board of International Reviews in Food Science and Perfumer & Flavorist, Past Officer of American Chemical Society, and Member of Institute of Food Technologies, Minnesota Section of IFT, and Minnesota Chromatography Forum.
  • First recipient of Flavor Extract Manufacturers Association (FEMA) Excellence in Science Award

Dr. Devin Peterson

Ph.D., Associate Professor for Food Science and Nutrition at the University of Minnesota

 
  • Research focuses on food flavor and related chemistry with particular emphasis including flavor generation, characterization of flavor compounds (taste and aroma), taste-aroma interactions and modulation, and flavor delivery
  • Focus on investigation of fundamental knowledge to provide practical solutions
  • Recipient of the Presidential Early Career Award for Scientist and Engineers
  • Member of the American Chemical Society and Institute of Food Technologists
